Rogov's Ramblings: Tournedos Rossini
Born in Pesaro, Italy in 1792, opera composer Gioacchino Antonio Rossini traveled extensively and, at various times, made his home in Bologna, Florence and Paris. Once, in a letter to a friend, he wrote that "I travel not so much for the sake of my music as for that of my stomach." Here are two world-famous recipes that were dedicated to Rossini by the Casimir Moisson, the greatest chef at Masion Doree, which call for Tournedos: A fillet of beef cut from the tenderloin, and foie gras: a seductive delicacy of duck or goose liver appreciated by the gourmet for centuries.

Recipes from the Virginia Housewife
This gem only includes a few recipes, but is priceless for the authenticity. The book, first published in 1824, not only included historic recipes, but also gave a very good account of the "duties" of the mistress of the house.
